Bake Up The Potatoes (if you need directions on how to bake a potato- Google it)
While The Potatoes Are Baking Fry Up Some Bacon and Thinly Sliced Jalapeno Ringlets
Slice Your Baked Potatoes In Half and scoop the insides out. Mix potato guts into a bowl with your chopped up bacon and jalapenos
Stuff the hollowed out potato skins with your mix and top generously with more cheese
Grill Master Joey C, Smoked his first Brisket to Perfection.

So Lobstermen and Smoking Fanatic Pete Libro,Β Skipper of The F/V Cabaret IV had an extra smoker that he gave me to use down the dock.
I sent Toby out to buy a brisket and he came back with one from Market Basket for $6.99 lb which seems like a lot but it is grilling season so that’s probably the reason for the high price.
Laid out a couple sheets of foil and liberally applied Toby’s Rub.Β Covered it up and put it in the fridge til tomorrow morning.Β Plan is to get the smoker going at 6AM.
Update 5:00AM
Prepping the smoke

5:52 252 degrees checking it down

6:04 cranked all bottom vents down and temp retreated to 239
Putting brisket on soon
Unwrap brisket which we rubbed down yesterday and put in the fridge overnight.
6:13AM 237 temp inside the smoker
6:17AM Insert The Temp Probe And On She Goes-
6:30 not a lot of smoke coming out so opened up two bottom vents wide open and Temps and smoke resume.
Captain Pete Libro stops by to check out the smoke and makes a few adjustments telling me not to be afraid to let the Temps climb and advises to keep the temp inside the smoker between 275-300 degrees.

7:39AM and she’s cranking along at 248-250 degrees and a light rain has started.

8:49 Temps inside the smoker around 270. Good amount of smoke coming out of the top vents
10:34AM
All three bottom vents are half closed but Temps have been climbing. Strong wind may be the culprit? Temps climbed to 279 and now settling back in at 275. Been adding a couple small chunks of apple wood every hour or so.

10:40AM
Not a lot of smoke so opened the door and shuffled the lump and wood around and everything is back on track.
Check internal temp with thermapen :

Here she is 4.5 hours in!

Haven’t added and wood for a couple hours.

12:34PM We Close! 187.5 internal temp. Bark lookin SWEEEEET!

1:20PM Stuck The Thermapen In And Got An Internal Reading Of 193.4
Ratjer than risk a boat coming in that I’d need to tend to and make me let the temp get past 105 I decided to pull it and wrap it in foil.

Wrapped the Brisket in foil and placed it inside a cooler. Plan to check on her in an hour

In all the years posting polls on WordPress I have never seen lead changes and wild swings in votes like I did in this poll. There were 4 different lead changes. There were long stretches where the top 3 or 4 contestants were within 3 percentage points of each other and top 1 and 2 were within 1 percentage points.

All Of the contestants obviously have huge followings and out of the huge number of bartenders in Gloucester the old cliche “It’s an honor just to have been nominated” certainly holds true.

1 log Jimmy Dean frozen sausage
1 Kraft Old English Cheddar spread 5 oz. package
2 (15 count) packages of Athens brand filo pastry cups
hot sauce to taste
this recipe is simple/easy…place sausage in refrigerator to thaw…in large skillet cook off sausage constantly breaking it down to little pieces…drain off fat…add hot sauce and blend completely with the cooked sausage…add the contents of the jar of Cheddar spread, blending until cheese is melted and sausage is completely coated…spoon mixture into filo cups…
if you are not going serve immediately the cups can be refrigerated or even frozen…when you are ready to serve simply place on a sheet pan and heat in a 350 degree oven for about 10 minutes, a little longer if frozen…I like Tapatio brand hot sauce, it is relatively mild and has great flavor…I use 2 tablespoons…stronger flavored hot sauces are not recommended as some would object and not enjoy…I purchase the Tapatio at the dollar store at Gloucester Crossing…I would guess that the recipe could be made with ground chicken or turkey but you would guess at the amounts…and the hot sauce is optional too…enjoy
